LOMO SALTADO



Any one hungry? Lomo Saltado one of Peru's favorite dishes everyone loves to eat ( well, most of the people I know have tried it and loved it ;-) so I will say everyone ;-)

For those of you interested in preparing this exquisite(wow, I don't really use this word often but, I thought it sounded very sophisticated) dish:-) here is how to:

INGREDIENTS
4-5 large potatoes (to make fries)
1 pound beef tri tip, sliced 1/8 to 1/4 inch thick
salt and pepper to taste, and of course a pinch of AJI NOMOTO (seasoning)just a bit.
1 large onion, sliced into strips (I use purple onion)
3 large tomatoes sliced into strips
1 dash soy sauce
2 tablespoons chopped fresh parsley

DIRECTIONS
In a sauce pan add the potatoes to fry, make sure the oil is hot.
While the French fries are cooking, heat the oil in a frying pan over medium-high heat. Season the sliced meat with salt, pepper and Aji nomoto to taste. Fry the meat until just cooked, and the juices begin to release. Remove the meat from the frying pan, then cook the onions, with additional oil if needed, until they are transparent. Stir in the tomato; cook until the tomato softens. Pour in the soy sauce, add the french fries, cover, and cook until the beef is done, about 3-4 minutes. Season to taste with salt and pepper, and sprinkle with chopped parsley to serve and ofcourse steam rice on the side. Enjoy
